Beef & Black Bean Queso Burritos

A variation to the Queso Chick with Rice and Black Beans Burritos I wrote about months ago and added to my Freezer Cooking list in preparation for Fall 2020…this recipe uses beef!

This one doesn’t include rice (but could!) and isn’t made in the crock pot but it’s quick to come together in ONE PAN and freezes wonderfully.

Beef & Black Bean Queso Burritos

Ground beef and black beans wonderfully seasoned with all your favorite taco flavors plus green chiles and held together by ooey gooey queso deliciousness.

Ingredients
  

  • 8 large flour tortillas or gluten free
  • 3 lb ground beef
  • 1 onion chopped
  • 1 can black beans drained and rinsed
  • 1 8oz can diced green chiles
  • 1 can rotel
  • 1 envelope taco seasoning
  • 1 jar queso

Instructions
 

  • brown beef with onion, drain, rinse and return to pan
  • add remainder of ingredients, stir to combine
  • roll into large tortilla shells
  • individually wrap in foil
  • warm in oven (or on grill) about 20 minutes to bring all flavors together
  • serve with chips and guac!

Notes

–if freezing and using gluten free tortillas, do not assemble (i.e. roll ingredients into tortillas). Instead, put filling in freezer safe, air-tight container and freeze separately from tortillas (tortillas can be frozen without the filling and thawed OR you can purchase fresh when you’re ready to eat). Thaw all ingredients, assemble and warm in oven.
**failure to do so will result in soggy, yucky tortillas that simply fall apart (and taste terrible).

What you see: individually wrapped/assembled burritos in flour tortillas plus a container of the filling frozen separately. What you don’t see: 2 gluten free tortillas wrapped in plastic, then foil (under that which do you do see). Everything frozen together and stored in a large zip-top bag for both a “regular” and gluten free dinner option.
