Sauteed mixed veggies is one of my absolute favorite side dishes during the summer months when my garden is booming.
It’s not too shabby in the winter-time either.
These sauteed mixed veggies are the perfect accompaniment to any meat dishes and it checks all the boxes for simple, delicious and nutritious.
Sauteed Mixed Veggies
- 1 zucchini sliced
- 1 yellow squash sliced
- 1 medium onion sliced
- 1 green bell pepper sliced
- 1 red bell pepper sliced
- 2 cloves garlic minced
- 2 tbsp olive oil
- heat oil in pan over med-high heat
- add mixed veggies and sautee until done (take care not to stir too often so as allow veggies to lightly brown)
- season with salt and pepper to taste
- serve warm
