• Mexican Chicken Casserole

    Please don’t judge this recipe by the picture. It’s awful. I know! Getting an appropriate mouth-watering picture was a struggle (I’ll try again after it’s cooked and with any luck can do a picture update then).     A variation to the Queso Chick with Rice and Black Beans Burritos I wrote about months ago and added to my Freezer Cooking list in preparation for Fall 2020…this recipe uses beef! This one doesn’t include rice (but could!) and isn’t made in the crock pot but it’s quick to come together in ONE PAN and freezes wonderfully.

    Oh what a relief it is to have 24 meals prepped and ready for my family this fall!! No matter what comes our way, we will be prepared….at least for a few weeks where dinner is concerned.
