    Rice is a staple that is relatively easy to find (except for during pandemic hysteria: add this to the list of things that were hard to find, along with toilet paper and hand soap), inexpensive, filling and has a great shelf-life.     A couple of years ago a dear friend of mine gifted me an Instapot. Unfortunately, I have to admit that I haven’t used it as much as I’d like.
